
I will never forget my sister and her husband (so fun to say that since their wedding was 2 weeks ago!) making these for our family for Christmas morning last year. My brother-in-law very carefully placing each blueberry by hand onto each pancake on the griddle. You KNEW this was a man that loved my sister as he was taking his job VERY seriously!
These pancakes will be your family’s new favorite.  You might as well just toss every other recipe you have out the window now. Because OMG, HANDS DOWN, BAR NONE, WITHOUT FAIL, this is the BEST pancake recipe EVER! (Did I get my point across?!?!?) I know there’s this thing about not building things up too much, but I CAN’T HELP IT when it’s THIS GOOD!
OK I’ll calm down now.
We make pancakes 90% of the time on Saturday morning. I highly suggest serving with whipped cream and coconut syrup.
And don’t turn your “no coconut nose” up at me either! Just try it. If you like Pina Coladas, you will like this, I assure you. Just heat and serve.
But before you get to that good stuff…..there are a few other good things first….

Blueberry Buttermilk Pancakes

Cook Time:15 min
Level:Easy
Serves:4 to 6 servings
Ingredients
2 cups all-purpose flour
1/4 cup sugar
21/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
2 cups buttermilk
1/4 cup melted unsalted butter, plus some for frying
1 cup blueberries, fresh or frozen
Serving suggestions: whipped cream and maple syrup
Directions
In a large bowl sift together the flour, sugar, baking powder, baking soda, and salt.
Beat the eggs with the buttermilk and melted butter. Combine the dry and the wet ingredients into a lumpy batter, being careful not to over mix, see Cook’s Note*.
Heat some butter in a skillet over medium heat. Spoon 1/3 cup of batter into the skillet and sprinkle the top with some of the blueberries. Cook for 2 to 3 minutes on each side.
Serve with a dollop of whipped cream and maple syrup.
*Cook’s Note: Over mixed batter will result in flat, heavy pancakes.

Recipe looks great. Buttermilk is rarely [never] in our house, but here is the quick fix…
1/2 cup milk plus 2 tsp white vinegar does the same. Double it for this. Now you are always ready for pancakes! (and your other favorite buttermilk-demanding recipes)
