Happy Friday everyone! It’s our last family weekend with 4, come Tuesday we will be 5…and that just sounds like a BIG NUMBER! My husband is thinking plane tickets, ski lift tickets, school tuition, cars, and weddings…..I’m just thinking of shoes….

Just to let you know, next week’s menu and shopping list are posted.  And I am hoping to post one for each of the weeks in March.  We will not be making these menus in our house as we have been given  a GIFT from SO MANY FRIENDS AND FAMILY…our dinners will be arriving on our doorstep each day for the coming weeks (THANK YOU EVERYONE!!!).  So PLEASE do let me know if you see any errors or issues!  Enjoy your weekend and hug your Littles!

Now onto today’s Guest Post!!

Our Friend Favorite today comes all the way from Canada!  Emily has become the next thing to a sister to me.  She lives in Canada with her fabulous husband and 2 darling Littles.  Her husband is one of the brothers that we grew up with during the summers at my parents lake house.  I can’t wait for our girls to share in the same summer fun we did growing up!  And my great Aunt that Emily mentions below is a fabulous woman!  A spitfire at 90 that keeps us all on our toes!

Meet Emily Dunn, Riley and Josie!

This is a favourite of mine for 3 reasons:

1. It is super easy to bake
2. It is so moist and delicious
3. It is always a big hit with guests

This recipe in fact comes from Shanna’s great aunt Helen Lambert who is a neighbour of ours at my husband’s cabin in the Caribou-Chilcotin region of British Columbia. I always get so many compliments whenever I bring this cake to parties, dinners or BBQs so I hope you all enjoy it too!

Lambert Chocolate Cake

1 box of chocolate cake mix (any kind)
1 package of instant pudding mix, chocolate
1 cup of sour cream
1/2 cup warm water
1 1/2 cup chocolate chips
1/2 cup vegetable oil
4 eggs

Mix all ingredients together except for chocolate chips. Beat for 2 minutes. Fold in the chocolate chips. Pour into a greased (and floured) bundt pan. Bake 350 for 45-55 minutes. Sprinkle with icing sugar and fill the middle with cut fresh strawberries (or any colourful fruit).

*** Awesome!  Thank Em, and thanks Auntie Helen!  Love having a new EASY and tasty recipe to add to the files!  Did I mention that my great Aunt used to be a Home Economics teacher?  I trust her implicitly!
