Ravioli Lasagna.
Have you ever made lasagna using fresh ravioli? So easy and tasty!  Literally this is what you need mozzarella, Parmesan, ground meat (I use ground turkey and pork sausage), marinara sauce, and ravioli (I used Costco’s spinach/mozzarella/Parmesan). Last night (Sunday) while hubs was giving the kids a bath I go dinner ready for Monday.  Cooked the turkey and sausage, drained the fat from the pan. Added tomato sauce along with a 1/2 jar of store bough marinara in the fridge, S & P. I let it simmer while I graded the Parmesan and Mozzarella, and then layered ~ sauce, ravioli, sauce, both cheeses, ravioli, sauce, both cheeses. Covered and put in the fridge, then heated tonight for 45 minutes at 375 degrees ~ YUMMMMMY and easy!

Grilled flank steak, Salad, Rice Pilaf

Out! (Normally our date night is Thursday, but we needed to switch things this week again). Not sure what the Littles are eating yet…left over lasagna & fruit??

Out. While we’re not normally a 2 night out kinda couple, we have family in town this week, so were out on Thursday too!

Steak & Veggie Fried Rice (I use THIS as the base for any kind of fried rice meal) and still  hoping to bake these cookies from Two Peas and Their Pod with the Littles during the day. I always love when you add pudding to cakes, so I can’t wait to see how these turn out!

I big puffy heart Cafe du Monde!

Have you ever been to New Orleans?? If you have not, get your backside down there for a little Spring trip. Spring is so beautiful there!

I have a wonderful college friend that has included me in so many fun New Orleans adventures…and Cafe du Monde is ALWAYS a part of all of those adventures! There is really nothing like a hot cafe au lait with an even hotter fresh beignets topped with sweet powdered sugar!!!  Oh man, my mouth is watering just thinking about it!

However, I do not get as many chances in the ole calendar to get down to Louisiana now as I used to (*sigh with sadness*). Thankfully for me, Cafe du Monde will ship both their coffee and beignet mix to you!  When I first moved home from Texas I had a regular order of their coffee shipped my way….was ever so thankful for those boxes on my doorstep.

And then one day I happened on the mix at a Cost Plus World Market. Really!?? REALLY! And I’ve been buying it there ever since.

They really are beyond easy to make.  Start to finish, MAYBE 20 minutes.

For some reason last week I pulled out a heart cookie cutter rather than making the little beignet squares….and who knew….they turned into BIG PUFFY HEARTS when I fried them up! The kids had a big kick out of this. We’ve been testing differnet shapes and so far hearts and flowers are still our favorites.

Give it a shot, I think they will become a Big Puffy Heart Favorite!

What is the Ikea Rug in Piper’s Room?

The rug is from Ikea and is their Tarnby Flatwoven Rug.  I used a 5′ 11″ x 8′ 2″ in Piper’s Room, but it also comes in a larger 6′ 7″ x 9′ 10″ size. Unfortunately, not in a 9′ x 13′.

Another idea you could try is Natural Area Rugs.  I noticed them on Groupon recently and their prices looked pretty reasonable. I have not tried them before, but they did have some good free shipping options which would entice me to check them out!
