{good eats} a little rainbow love

Rainbow Cupcakes 10

So what do these have to do with anything?  Well, when you have a 3-1/2 year old currently fascinated with cooking and food….

Seriously, I’m not kidding. She’s been waking up from her nap asking to watch cooking shows.

I’m kinda feeling like I need to fully support this little development.  She’s watched Giada make salmon, and it’s npw her FAVORITE dinner (it’s our whole family’s favorite) actually.  She watched Ina make carrot cake, and promptly requested Grandma bring us carrots to bake a cake…and she did…so we did.

Then this past weekend, Addie asked for a rainbow cake.  Now we have not watched a cooking show on this and I have no idea where she got the idea….but apparently, a rainbow cake we would make.

There are loads of wonderful inspiration photos and tutorials out there, but I was lazy and didn’t feel like looking them all up.  (I was also short on time, and was pretty sure the Little Punks’ patience level wouldn’t make it for a full cake, so Addie agreed cupcakes would work.)

How can you argue with lips like these? Totally smoochable!

We used a white cake mix, because, as always, I’m lazy, and divided it into 6 bowls.   Hayden (2-1/2) and Addie (3-1/2) each mixed 3 colors. (I used Wilton’s color gels, love em! You can buy small sets at Sur la Table.)

Hay also took on the roll of color inspector…

Once Hay approved, we scooped 1 small scoop of each color into lined muffin tins in the rainbow’s reverse order.

Kinda looks like paint, huh??

Then they baked up into these…

We whipped up Addie’s favorite cream cheese frosting (in the spirit of a red velvet cake) courtesy of Ina’s carrot cake, then applied a few swirls with the help of a Ziplock bag and a snipped off corner.

Hee, hee…we were feeling pretty good about our cupcakes!

But of course, what’s life really mean if you don’t add more?  So we topped them off with a few rainbow sprinkles.

So cute!!

She loved em!

And obvioulsy so did this little princess!

Hubs liked em too….

And frankly, even the wrapper turned out cute!

I see these in our future, a lot! In any color theme our little parties take us.  Enjoy!

  1. Oh my holy rainbow cuteness…this idea is genius! Oh the places one could go! The place you did go! Love it.

  2. These are the cutest thing I have seen all day! Oh my gosh – what a great idea for a party (plus love the photos on this dreary day in Boston!).
