Week of April 4th

Still keeping dinner pretty easy around here…busy, busy schedules!

MONDAY:
Ravioli Lasagna.
Have you ever made lasagna using fresh ravioli? So easy and tasty!  Literally this is what you need mozzarella, Parmesan, ground meat (I use ground turkey and pork sausage), marinara sauce, and ravioli (I used Costco’s spinach/mozzarella/Parmesan). Last night (Sunday) while hubs was giving the kids a bath I go dinner ready for Monday.  Cooked the turkey and sausage, drained the fat from the pan. Added tomato sauce along with a 1/2 jar of store bough marinara in the fridge, S & P. I let it simmer while I graded the Parmesan and Mozzarella, and then layered ~ sauce, ravioli, sauce, both cheeses, ravioli, sauce, both cheeses. Covered and put in the fridge, then heated tonight for 45 minutes at 375 degrees ~ YUMMMMMY and easy!

TUESDAY:
Grilled flank steak, Salad, Rice Pilaf

WEDNESDAY:
Out! (Normally our date night is Thursday, but we needed to switch things this week again). Not sure what the Littles are eating yet…left over lasagna & fruit??

THURSDAY:
Out. While we’re not normally a 2 night out kinda couple, we have family in town this week, so were out on Thursday too!

FRIDAY:
Steak & Veggie Fried Rice (I use THIS as the base for any kind of fried rice meal) and still  hoping to bake these cookies from Two Peas and Their Pod with the Littles during the day. I always love when you add pudding to cakes, so I can’t wait to see how these turn out!

SATURDAY:
